These Low-Carb Jalapeño Turkey Burgers are slightly spicy, cheesy, full of flavor, and lighter than a traditional beef burger. Grilled jalapeños and caramelized onions add brightness and heat, while gooey melted cheese and a lean turkey patty keep the sandwich satisfying without the extra carbs.
At home, I like to swap beef for turkey (or chicken) to keep the burgers lighter, and I use crisp romaine leaves instead of a bun for a low-carb wrap. You can easily sneak extra vegetables into the patties—finely chopped spinach or mushrooms work especially well—and adjust the spice level by removing jalapeño seeds or using milder pickled peppers. This recipe is flexible, straightforward, and perfect for warm-weather grilling or a quick weeknight meal.
How to Make These Low-Carb Jalapeño Turkey Burgers

Servings: 8 | Prep: 20 mins | Cook: 20 mins | Total: 40 mins
- In a large bowl, combine the ground turkey (or chicken), chopped spinach, minced garlic, egg, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, a pinch of cumin, and mix until evenly combined.
- Portion the mixture into small patties about 3–3½ inches wide, using roughly 2–3 tablespoons of mixture per patty. Set aside on a plate.
- Heat 1 tablespoon of extra-virgin olive oil in a medium skillet over medium heat. Add the turkey patties and cook for 4–5 minutes on the first side, until browned.
- Flip the patties, place a slice of cheese on each, add about 1 teaspoon of water to the pan (pour into the pan, not on the patties), and cover the pan with a lid. Cook covered for 4 minutes, then remove the lid and cook 1 more minute to finish. Repeat until all patties are cooked through.
- While the patties cook, warm 2 tablespoons of extra-virgin olive oil in a separate skillet over medium heat. Sauté the sliced onion and jalapeño peppers for about 4 minutes, stirring every minute, until softened and slightly charred.
- Assemble the burgers by placing a cooked patty on the bottom half of a romaine leaf, adding a spoonful of the grilled onion and jalapeño mixture, a slice of tomato if desired, and topping with the romaine half to create a lettuce “bun.”
Low-Carb Jalapeño Turkey Burgers – Tips & Tricks
- Taste and adjust seasoning: because ground turkey is lean and mild, be generous with spices and salt to build flavor.
- Control the heat: remove jalapeño seeds and membranes for milder flavor. To amp up the spice, use serrano peppers or add a pinch of cayenne.
- Hidden veggies: finely chopped spinach, mushrooms, or grated zucchini can be added to the patties to boost nutrition and moisture.
- Cooking alternative: for grill cooking, shape slightly larger patties and grill over medium heat; add cheese and let it melt with the grill lid closed.
- Storage: refrigerate leftovers in an airtight container for 3–4 days. Reheat gently in a skillet or oven to preserve texture.
Ingredients
Turkey Patties
- 1 lb lean ground turkey (or chicken, or beef)
- 1 cup spinach, chopped
- 2 large garlic cloves, finely minced or microplaned
- 1 large egg
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Pinch of cumin
- 2 tbsp extra-virgin olive oil (evoo), divided
Toppings
- 10 slices mozzarella or pepper jack cheese
- 1/2 onion, sliced (white or red)
- 2 jalapeños, sliced (omit seeds for less heat)
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 roma tomatoes, sliced (optional)
- 10 romaine leaves, halved, for lettuce “buns”
- Ketchup and mustard, to taste (optional)
Instructions
- Prepare the patty mix as described above and shape into bite-sized patties. Keep the patties uniform in size so they cook evenly.
- Pan-fry the patties in 1 tablespoon of evoo on medium heat until browned on the first side (about 4–5 minutes), then flip and add cheese. Steam briefly with a splash of water and a lid to melt the cheese and finish cooking.
- Sauté sliced onion and jalapeño in 2 tablespoons evoo until soft and slightly caramelized, about 4 minutes.
- Build each burger with a romaine leaf “bun,” a turkey patty, grilled peppers and onions, tomato slice if using, and desired condiments.
