Ingredients
  • 1 lb. penne pasta
  • 2 tbsp. olive oil
  • 15 oz. canned diced tomatoes
  • 3–4 roma tomatoes, diced
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 tsp. dried oregano
  • 1 tsp. dried basil
  • 3 chicken breasts, cooked and shredded*
  • 8 strips of bacon, cooked and crumbled
  • 1 cup shredded mozzarella cheese
  • 1/4 cup julienned fresh basil leaves
Instructions
  1. Bring a large pot of salted water to a boil. Cook the penne according to package directions until al dente. Drain and set aside.
  2. In the same pot over low heat, warm the olive oil. Add canned diced tomatoes, fresh diced roma tomatoes, salt, pepper, oregano, dried basil, shredded chicken, and crumbled bacon. Stir gently to warm through and let the flavors meld for a few minutes.
  3. Return the cooked pasta to the pot and toss everything together until well combined.
  4. Stir in the shredded mozzarella until it melts and coats the pasta. Taste and adjust seasoning with additional salt or pepper if needed.
  5. Serve the pasta topped with the julienned fresh basil leaves for flavor and color.

Notes
*For the chicken: season breasts with salt, pepper, garlic powder, onion powder, and smoked paprika. Drizzle with olive oil and bake at 350°F for about 30 minutes, or until cooked through. Shred and use in the recipe. You can also use rotisserie chicken for a shortcut.
