Ingredients

For the flatbreads
  • 1 lb chicken thighs, boneless and skinless, diced (500g)
  • Olive oil
  • 1 tablespoon lemon juice
  • 3 garlic cloves, crushed
  • 1 teaspoon salt
  • 2 teaspoons dried thyme
  • Black pepper
  • 1 can chickpeas, drained (14oz/400g)
  • 1 teaspoon smoked paprika
  • 4 slices streaky bacon
  • 1 Romaine lettuce, shredded
  • 3 scallions, finely sliced
  • 4 large flatbreads or wraps
For the Caesar dressing
  • ½ cup garlic aioli, mayonnaise, Greek yogurt, or whipped cottage cheese
  • ¼ cup grated parmesan cheese, plus extra to serve
  • 1 teaspoon fish sauce
  • 1 teaspoon white miso paste
  • Black pepper

Method

  1. Marinate the chicken. Heat the oven to 450°F (230°C) and line a sheet pan with parchment paper. In a large bowl, mix 2 tablespoons olive oil, lemon juice, dried thyme, crushed garlic, salt, and plenty of black pepper. Add the diced chicken and toss until well coated.

  3. Cook the chicken. Spread the marinated chicken on the prepared tray in a single layer. Roast for about 20 minutes, or until golden, cooked through, and lightly charred at the edges.
  4. Make the dressing. While the chicken and chickpeas cook, combine aioli, parmesan, miso paste, fish sauce, and black pepper in a small bowl. Mix until smooth and creamy.
  5. Prepare the salad. Cook the bacon in a hot frying pan until very crisp, then chop or crumble it. Add the shredded lettuce, scallions, bacon, and half of the crispy chickpeas to a mixing bowl. Add half of the dressing and toss until coated.
  6. Assemble the flatbreads. Divide the dressed Caesar salad between the flatbreads. Top with charred chicken, the remaining crispy chickpeas, extra parmesan, more dressing, and black pepper.
