How to Make Pumpkin Muffins

Mix dry ingredients. In a large bowl whisk together the flour, granulated sugar, pumpkin pie spice, ground cinnamon, baking soda, baking powder and salt until evenly combined.

Mix wet ingredients. In a separate bowl or in the bowl of a mixer, blend the oil, beaten eggs, vanilla and pumpkin puree until smooth.

Combine to form batter. Gradually add the dry ingredients to the wet, mixing just until combined and no lumps remain. Spoon the batter into prepared muffin cups, filling each about three-quarters full.

Make streusel. In a small bowl combine flour, packed brown sugar, ground cinnamon, pumpkin seeds and chopped pecans. Pour melted butter over the mixture and stir until it resembles wet sand. Top each muffin cup with the streusel, pressing gently into the batter.

Bake. Bake in a preheated 375°F (190°C) oven for 20–25 minutes, or until a toothpick inserted into the center comes out clean. This recipe yields 16–18 muffins.
